It would have been like 12 or something and i did really love that side quest but at the end I wanted to include? skyward sword in this list and something had to be replaced. I did think about this list for about a month or two and i didn't want to keep pondering forever so I had to make a decision and stick to it. I'm glad you like the list overall

Jumping over the fence with epona was pretty epic in OOT, figuring out the controls in skyward just made me giddy, the stealth scene in wind waker, discovering the 2nd quest in zelda for first time, the bar scene in majoaras mask, the stealth? bit at gerudo valley, racist reactions to masks in MM the origin of hyrule from OOT, the twisty corridor in the forest temple in OOT, gannon laugh at you in AOoL. All these didn't make the list but were considered

The Moon crashing was probably the biggest pain in my ass ever. It was so infuriating.
I never got far in wind? waker, but just seeing that black and white, looks so crisp, its a beautiful way to take their game.
