What u should do is put a light baste of butter on prior to butting them in the oven. about half way through baste them again. Once they are fully cooked, put one last light? baste of butter on, THEN add your reggiano chesse. Then put the sticks underneath the broiler for 10-15 seconds and it will come out golden brown. Also during the baking process, keep the bread on the middle rack.

You can throw it in with the flour, sugar, warm water(110deg), garlic salt. I use active dry yeast that I proof before making doughs and it gets good and foamy. Leave out the salt, of course when proofing. Also curious if the stick were crunchy or semi-soft?

Yeast is? a living bacteria. when its in the jar or packet ( like you had) its kinda in a suspended animation where its not doing anything. the water brings them out of that. so they can rise the bread.
